Sight, because it is my weakest sense and the others can compensate for it. Would never voluntarily lose hearing, music is central.

Taste: sight, sound, and touch are all essential to everyday life. Lack of sight greatly hinders navigation and indeed many forms of information reception (reading from a screen, for instance). Lack of hearing makes it impossible to pick up on most conversation, unless you're close and staring directly at the person, and can read their lips; hearing also enables you to keep track of things you can't see remotely. Without a sense of feeling, you wouldn't react to uncomfortable positions, etc. the way you're supposed to, and will quickly wear your body down. As for smell and taste, much of what we think of as "taste" is actually a result of smell; furthermore, if you're careful about what you eat, the importance of taste in preventing you from ingesting poisonous substances can be greatly reduced.

You could, depending on your definition of taste, simply be losing the basic tastes like sweet, sour, bitter, and savory.

The things like "Hey, this is lemon!" are actually connected with your nose.
