Which touch? If I remember correctly, there is like three seperate touch senses.
It is hard for me to say because every sense has it's purpose (read:Stop doing force vote, or add a "lolwut" option.)
I disagree with taste not being useful because if something is wrong with what you are eating, usually you can tell by how bad it tastes. Obviously, this would help you to not eat bad food ("bad" meaning harmful. Also I realize that it isn't always true... but it is quite often. Take that turkey that's been sitting in your fridge for who knows how long... If you, for whatever reason, take a bite of that you'd

I'd lose the smell. The thing is, if you lose your sense of smell, you also partially lose your sense of taste.
Taste, because half of what you taste is done through smell.
(Try eatting diced onions and apples without smelling or seeing them, and see if you can tell them apart.)
More than half. I think it's like 70%, but it's been a while since I looked into it. I just know most of it is smell. Basically all your tounge does is characteristics of the flavor: sweet, salty, bitter, sour, and more. Smell is what distinguishes between the different substances.
