Why does an unprotector like osmap mess up the strings like a unit name suddenly becomes the comment for a trigger in the editor?
And why is it that when you actually play the unprotected map, it plays with the strings all put back to normal, but the editor doesn't read it that way?
And finally why does an unprotector even scramble the strings up like that? Can't it just put them in the same order that sc reads them?
Depends on:
The editor used before protection.
The protector used.
The editor used after unprotection.
Usually OSMAP2 will handle things just fine but if its an SF map keep it in SF. If its an SCMD map keep it in SCMD.
Remove comments and reset location names.
Strings not used by SC are usually removed (and may not be set to 0).

What unprotector are you using? I know that older versions of OS Map had string issues like this, but the latest version doesn't from my knowledge.
None.
