Is there any way to tell what process(es) is/are using the harddrive?

Depends on what you mean, you could check for handles, so you know what processes are using files on the harddrive..

What'd be most useful is like the Task Manager that lists the processes and how much CPU they are using... but instead I'd like something that shows how much/if they are using the hdd.

What I usually do is add the I/O write bytes columns to taskmanager. Most of those bytes are being writen to the HD so you can somewhat tell what apps are using it.

With the modern EUD editors, I don't think they're calculating nearly as many offsets as you might imagine. Still some fancy ass work that I'm sure took a ton of effort
