Ex, it sounded like you were hold yourself back on the RAM you picked. What would be the next one up for you?
-Due to the combo deal, stick with it. It isn't the ABSOLUTE BEST DDR3 1600 RAM, but you aren't benchmarking, you aren't encoding 1080p 12GB movies, and you aren't rendering huge screens of 3D models. Latency and frequency are a non-issue for you. There is better, but at a higher price which isn't worth paying.
@the dvd drive: Can I get something even cheaper, because I don't even want writing functionality at all.
-No. Bottom of the bin are ~20$ for SATA and you do not want IDE. You might be able to save literally 2$ by giving up write functionality, and that'd make no sense at all.
@the GFX: did you want me to buy 2 of these?
-That's up to you. If you want more GFX power, get two. If not, don't. I don't think you need two, but its an open upgrade path.
@motherboard: were you holding yourself back here too? Is there something better for more money w/o that bottle necking problem?
-No. AMD chipsets will always be the limitation of AMD setups. That board is excellent, and if you need to, you can tweak some settings to make the chipset move even faster.
@PSU: What's this talk of people being disappointed at a lack of modular cables?
-Modular means you can remove cables you're not using. Modular PSUs have higher resistance due to the connection points (bad), and are much more expensive to get a good one. You don't need modular, its a non-issue for you. The M59 has plenty of places to tuck away, route, and hide cables.
I still need to buy cables right? Help with that.
-No actually you don't. All the cables you need will be included.

For heatsinks:
I won't link any because I don't like the prices I'm seeing. But try and get either a Scythe MUGEN 2 RevB, or a Cooler Master Hyper 212+. For about the same price as what the MUGENs are going for, is the Thermolab BARAM which I'm using to cool my i7 920 @ 4GHz. The mounting system is a pain in the ass but its one solid cooler.
IMPORTANT:
I noticed the M59 doesn't have a front fan included. Front fan brings in air and blows over the HDD cages. This is IMO an absolute must. Grab one of these:
