About how long does it take to make a good looking (infantry) GRP? I might want a modder to help me with my Last Stand RPG Challenge.

Not that long. Look at my Biophysics thread for some examples of things I made in about half an hour. You can get textures from
Filterforge.
Btw, I can help you with GRPs, unless you want infantry GRPs, which are really hard because they have about a gazillion frames.

I made a 3d model grp with the help from polaris great 3d modding tutorial in less then 30 minutes.

I just need an idea of how long it would take, because if it takes a long time, I want to get a modder working on them when I've worked out which units I want changed while I'm making the map to save time.

It depends how good you are at 3D modeling, texturing, and animating. For someone with little or no experience making a human figure, it will be long and hard.
