In my diplomacy map, I am trying to allow players to build on geysers but not be able to mine the gas itself. The Gas counter will be used for something else. How do I work around on this?
I have tried using a trig to remove all gas chunks.

Give the Assimilators to another player
Give it to P12. It will retain the player color and alliance status (enemies will auto-attack it while allies ignore it).
You can track geysers owned by moving a burrowed unit under the geyser when it is given to p12, and cycle through them every few seconds to check if a P12 assimilator is there. If not, kill/remove burrowed unit and subtract 1 from the DC used to track number of geysers owned.

If players need vision of their Assimilators, stack an invincible Independent Starport on them all, and give that to the player that "owns" the Assimilator.

If it would be easier, you can also store store gas given elsewhere in a death counter, then transfer it to another death counter, set gas to 0 (if its over the stored amount) then give it back.

Well you could display a message "Mining gas doesn't give you gas, you get gas by blah blah blah." I've used it before, it looks a lot better. Tho I did abandon that idea to make it so you mine from a mineral to give you gas cuz that's just way cooler lol.

I thought that too at first, but experimentation proved that "move unit" will move them under buildings. The restriction is only for preplacing and "create unit".
I used the exact same method to make assimilators regen gas in SCVarena yet be unminable.

very informative a word of advice independant startport is very unstable in the wrong hands and can crash in various ways... it has been known to crash on some patches (theory and rumor) but use it anyways it should work for this version just make sure you don't lift it
