3rd gas is ridiculously easy to get; Zerg would be OP, I think.

I do see your concern. However, would it not be risky for Zerg to expand to the third gas because of the overlook the mains' have, especially against Terran? And, because of the two-way fork into the third expansions? As I have read, Zerg are not very good at holding multiple locations, especially in early game[?]. (Ah, I see now that Siege Tanks might not be able to hit the refineries at the top and left sides. Should this be changed?)
Although I see your concern, it seems that the third expansions can be overturned relatively easily.
The disadvantage of the two-way fork into the third expansions is negated by the relative proximity of the expansion to the natural. If you massed your army right outside your natural, it would take very little time for it to come to the aid of the expansion, should it come under attack.
Oh yeah, and place mineral chunks in those high dirt expoes.

Making a map Z>T is nearly impossible since T is so versatile however it might be Z>P so let's see what we can do about that.

No its quite possible, and quite easy too. T isn't an ultimate overwhelming race in SC as you think it is, although powerful, not invincible.

And I do see a problem with an early 3 gas Z, easily defendable- and if the Z is to maintain control over the field, it could probably fasttech hive and rush defilers or ultras. Although that kind of terraining isn't really huge against Terran. Something like a mineral patch being close to the cliff or edge, making it easily vulnerable to muta would be a much more viable rig against T- which I dont see. If you made the 3rd gas less easily defendable, like instead of using a bridge on the path from opponent to your base 3rd, just plain large field would suffice. And with that, defending would prove to be hard.
