So I am finally playing Skyrim seriously. To be honest, before I just didn't care, then I went back through with maxed out graphics and decided to play a Wold Elf Sneak/Archery/Alchemy... It's fucking fantastic. Never have I been able to take down half a dozen fucks without them even finding me, so much enjoyment.

Depends how you're leveling them. Alteration defense skills won't gain experience unless you're in combat, for example. I'm at level 65 with several skills maxed out, so your cap experience is likely a placebo.
You can see how close a skill is to becoming the next level in the Skills option via a progress bar, and every loading screen shows your current level and the progress to the next level.
In most games i usually go for a mage tank (mage + warrior) then i play a ranger tank (ranger + warrior) doesn't matter though since i tend to bug abuse if the game is too hard

I like me some mage+melee action. I found buying spells to be tedious though, so I've come down to extreme alchemy + heavy armor + one hand + spellbreaker shield to be my fit as of now. Also a tiny bit of archery. Cuz y'know... snipin some bitches always rules.

With maxed archery, bound bow, and 5x ranged attack damage perks, I kill most things in a few shots. Notably, Elder dragons die in three fully-drawn shots; if I get a sneak attack, the 3x damage will kill most enemies, even the leveled ones.

The bound bow is pretty strong from what I've observed. The best bow would be one that you enchant yourself.
Daedric + Daedric Arrows is stronger than bound bow by a few points of damage. Not to mention enchantments + poisons you can use.

You can poison the bound bow. Daedric arrows are hard to come by, unless you do the arrow duplication trick in the thieves guild.
