Has Blizzard said anything about what exactly the beta ending entails? Are they going to require us to erase everything? Is it just the online game servers shutting down? Will we still be able to make and test maps?

No, but given what was said in the first post, it's pretty obvious:
- All battle.net accounts will be wiped
- If presently you can test custom maps offline, this functionality will still be available because it has nothing to do with battle.net
- When the servers come back up, there will likely be a patch to download
